Got this recipe from the King Arthur bakery. Their Keto Wheat Flour is brand new and everyone is experimenting with it. The recipe was originally Cinnamon Rolls, but I made Raspberry Jelly rolls. Additionally, the dough called for their fake sugar but I used a heaping tablespoon of honey, because the dough rises better. And yes, it added about 20 g of carbs, but still, each roll turned out to have about 11g carbs which is quite a bit less than the 40 carbs found in most jelly rolls, which weigh much lighter.
Dough Ingredients
- 2 cups (240g) King Arthur Keto Wheat Flour
- 2 tbl Powdered BochaSweet (we used one heaping tbl of raw honey)
- ½ tsp salt
- 2 tsp instant yeast
- ¾ cup (170g) milk, lukewarm (we used coconut milk)
- 3 tbl butter, soft
- 1 large egg
Original Filling Ingredients
- ¼ cup BochaSweet
- 2 tsp cinnamon (Ratio 2:12)
- 2 tsp Keto Flour
- 2 tsp milk (to make the above stick)
Our Filling Ingredients
Skinny Girl Raspberry Bellini (use as much as you need)
Icing Ingredients (we invented this)
- 8 oz cream cheese (room temp)
- 1 tbl lemon juice (optional . . . we love it)
- 1 tsp vanilla extract
- ½ cup Powdered BochaSweet
Directions
First we make the dough. Weigh out your flour. Combine everything in a large bowl, and using a stand mixer, mix on low for about 5 minutes until it all comes together, and then knead using wet hands into a ball. Cover the dough in a lightly oiled Tupperware bowl and let it rise for 1 to 2 hours, until close to double in size in your oven with the light on. It only took about an hour and 20 minutes for us.
When ready, split the dough into four equal parts, and roll them out on your bread board. It can be wet, or you can sprinkle a bit of flour onto the board. Your rolling pin can have a light coating of oil to keep the dough from clinging.
If making cinnamon rolls, wet the top with milk and sprinkle your cinnamon/sweetener combo onto the dough.
If making jelly rolls, just spread the jelly.
Then roll them up. We prefer using a tiny bread pan for the rolls, so we made sure they fit inside. You can bake these on a greased cookie sheet, or on parchment. We just prefer the bread pans, greased.
Preheat the oven to 350 degrees. Bake them for about 20 minutes. Just watch that they turn golden brown.
While they’re baking, mix up icing. We liked the added lemon, but that’s up to you.
We also like the powdered BochaSweet over the crystal, simply because it dissolves better.
You can store these a few day covered (or wrapped) but without the icing. Spread the icing just before serving.
