(Gluten Free, Low Carb Crust)
2 Cups Cauliflower Powder (from one head of Cauliflower) see below
1 Cup finely shredded part-skim Mozzarella Cheese (I use Pepper Jack)
¼ Cup grated Parmesan Cheese
¼ tsp dried thyme
2 large eggs
½ – 1 tsp Celtic Sea Salt
Hot Pepper Flakes
Pizza Sauce (see Marinara Sauce) Pizza Sauce is thicker than marinara sauce, but any organic marinara sauce will do if you don’t want to work your butt off in the kitchen.
Peppers, olives, onion, mushrooms, broccoli, anchovies, etc etc etc.
You will need a food processor. Tear off about three or four florets at a time from the cauliflower and process that until it is powder. Place that onto a large cookie sheet (with edges) or into a cake pan. Process the rest of the cauliflower head the same way and add that to your cookie sheet. Place the powder into your oven and set at about 160 and dry for three hours (either bake or drying setting). Every half hour or so, open the oven and turn over the powder with a spoon, spread it around, etc, so that everything gets evenly dried.
When dried and cooled, separate two cups of cauliflower powder and pour those into a larger bowl. (Or you can double the recipe by using 4 cups of powdered cauliflower). Add the soft cheese. Many use mozzarella but I must be the only Sicilian on earth who dislikes mozzarella cheese. It’s just too bland for my tastes. I prefer Pepper Jack. So add your soft cheese to the dried cauliflower powder, then add the Parmesan cheese, salt, thyme, hot pepper flakes (optional) and two good sized eggs. Stir it all up and then form a large ball.
Lightly grease up a cookie pan with a combination of coconut oil and liquid lecithin, or lay out some baking parchment. Place the ball of dough in the middle of the pan/baking parchment and press it out.
Put this in the oven at 350 for 25 to 30 minutes. When it’s brown, it’s done and you can add your toppings and sauce. If you want to make your own sauce, we have a Nutribullet version here: Marinara Sauce. Or you can use any organic marinara sauce you find at the store.
I never add the cheese till the pizza is fully cooked. It will take about 10 minutes at 350, so here’s a trick my Sicilian grandmother taught me:
Shred the cheese for the topping and add some finely grated Parmesan. Then crush up a clove or two of garlic and add that to the cheese. Then add some spices: basil, thyme, marjoram, oregano, powdered fennel. Mix it up all together. When the pizza with sauce is through cooking, add the cheese, turn the oven off, and place the pizza back into the already warm oven to allow the cheese to melt.
