Even if you’re not on a diet, this is a great low carb creamer with MCT oils, guaranteed to lift your energy and not stick to your fat cells. That’s what MCT oils do. And this is dairy free and vegan friendly.
Whisk together and bring to a rolling boil while stirring. Reduce heat to medium low, just enough to keep a slight bubbling going; the type of bubbling that goes away when you stir and comes right back when you stop. Heat for 25 – 30 minutes. The concoction will be reduced by half. Make sure you whisk occasionally.
This is how the bubbles should look when you stop stirring. Not a rolling boil.
You can flavor it anyway you want, but we added 1 Tablespoon of Vanilla Extract.

Most commercial coffee creamers (the artificial ones, not real cream) contain crappy oils, such as canola or soy oils, or the worst of all “partially hydrogenated” oils. We found one with coconut oil, but with a whole bunch of chemicals and artificial this and that. When you make it yourself, you know what’s in it.
