We found this recipe at alldayidreamaboutfood.com, which we have discovered to be a great site for low carb recipes. However, the overreaching concept of the site: All Day I Dream About Food, probably isn’t the best way to live one’s life considering that we are very overweight (as a nation) and far too many television ads focus on FUN food. When food becomes your source of “fun,” guaranteed you’re on your way to food issues. So, let’s not make our lives about food.
We have made some slight changes and have modified the instructions. So, let’s get cooking
1/4 cup Organic Butter
3 Tbsp Swerve Brown
3 Tbsp Bocha Sweet (if you can’t find, substitute powdered erythritol —Swerve)
1/2 Cup Heavy Coconut Milk
1/4 tsp Xanthan Gum
1/4 tsp Celtic Sea Salt
2 Tbsp Water
For Salty Caramel
1/2 tsp additional Celtic Sea Salt

In a medium saucepan over medium heat, combine butter, Swerve, and Bocha Sweet. You’re going to bring it to a boil, but be careful. This stuff won’t boil like everything else. It foams around the sides. Just keep stirring/whisking for 3 – 5 minutes, until everything has blended into a sauce.
Remove from heat and add your thick, heavy coconut milk. (Make this yourself with one cup of coconut milk powder and half a cup to ¾ cup water. The less water the thicker. It’s all up to your tastes.)
Sprinkle your xanthan gum over it and whisk vigorously to combine, and then add your salt. You’ll want to powder your salt in a mortar and pestle. The finer the better.
Return mixture to heat and boil 1 more minute. When it’s cooled down to just warm, add the water and mix it well.
For salted caramel, simply stir in additional salt at the end.
It lasts a pretty long time. In fact, I put a bit out on some wax paper and it took almost three weeks for it to start to mold. So, refrigerated, it should last a month or more. However, you’ll probably use it up quickly.
This gets hot. Really hot. So when your done stirring it, DON’T LICK THE SPOON!
You’d think you wouldn’t have to be warned, but I’ve made this three times and I BURNT MY LIPS THREE TIMES!
