Green cabbage, red cabbage, green pepper, red pepper, yellow pepper, carrots, beets, and craisins (cranberry raisins). (Everything is optional, just make sure there is cabbage.)
The Sauce
First blend up the powdered coconut milk with the water; get rid of the lumps. We use a submersion blender.
Then mix in the apple cider vinegar, homemade mayo, honey (or sugar substitute), and celery seed. It is best to put this in the fridge and let it sit overnight.
Then shred the veggies into a colorful mixture, add a cup of craisins (sweetened cranberry raisins) or raisins, and pour on the sauce.
Letting this sit overnight will also make it taste better. As my Sicilian grandmother used to tell me about spices and ingredients, “You gotta let them make a little love.”
